Why the best bakers are adding SWIR to their ovens
Most ovens just heat up the air and hope for the best. You wait for the air to get hot, then wait for that heat to slowly soak into your dough. It works, but it’s slow. Then you have Short Wave Infrared (SWIR). Think of it like the difference between standing in a warm breeze and feeling the sun hit your skin on a cold day. SWIR doesn’t mess around with the air; it dives straight into the bread, hitting the moisture and fats inside almost instantly.
The magic of the “Oven Spring”
We use quartz halogen tubes to make this happen. These aren’t your average lightbulbs. The halogen cycle keeps the filament from burning out too fast, so they actually last. When you flip the switch, the surface temperature jumps. Fast. This triggers that “oven spring” we all love—that sudden burst of growth—much quicker than a standard oven. The result? A better crust and a loaf that actually has some height to it.
Getting the gear right
Now, you can’t just throw any lamp in there. You’ve got to match the wattage and voltage to your shop’s power grid. If you’re running longer tubes, you’ll want a higher voltage setup so the power doesn’t drop off before it reaches the end of the lamp. And please,check your connectors. Whether you’re using R7s or SK15, make sure they can handle the heat. If you use cheap sockets, they’ll melt or spark, and that’s a headache nobody wants.
The catch (because there’s always one)
Here’s the thing: SWIR is powerful. Maybe too powerful if you aren’t paying attention. Because the heat is so direct, it’s easy to char the outside of your bread while the middle is still raw dough. It’s a balancing act. You have to play with the IR intensity and your airflow until it feels just right. Also, these things get scorching hot. Your oven’s frame and wiring need to be built for that kind of intensity, or you’ll be replacing components way sooner than you should. My advice? Use a PID controller to pulse the lamps. It keeps the temperature steady, stops you from burning your product, and saves a bit on the electric bill.
