
Getting That Perfect Golden Brown: A Guide to IR Lamps in Rotary Ovens
We’ve all been there. You pull a batch of bread out of the oven, and it’s… okay. But it’s not that color. You know the one. That deep, golden-brown crust that looks like it belongs in a magazine, but with a center that’s still soft and moist. Getting that right in a rotary oven comes down to how you handle your infrared heat. We use Nichrome lamps to trigger the Maillard reaction—the science-y term for that delicious browning—without drying out the inside of your loaf.
Finding the Sweet Spot for Heat
It’s a balancing act. If you use shortwave IR, the heat digs deep into the bread. Medium-wave is your best bet for that surface color. The trick is getting the wattage per centimeter just right. Here’s the problem: if you crank the wattage too high, you’ll char the tops of your loaves while the sides stay pale. But if you go too low? Your bread spends way too much time in the oven. That’s how you end up with a stale product that’s lost all its moisture.
Why Quartz and Nichrome?
Inside a bakery, it’s humid. Steam everywhere. That’s why we wrap our Nichrome elements in high-purity quartz glass. It keeps the filament safe from the moisture and lets the lamps heat up almost instantly. One quick tip: high-wattage tubes put out a lot of localized heat. Just make sure your oven’s ventilation is up to the task. You don’t want your sockets melting because the air isn’t moving.
