
Why we’re putting gold in your oven
Let’s be honest: most oven heaters are kind of wasteful. They spend all their time heating up the air, which then—hopefully—heats up your food. It’s a slow process, and a lot of that energy just vanishes into thin air. That’s why we’re moving toward gold-coated infrared (IR) heaters. Instead of playing a guessing game with the air, IR heaters send energy straight to the food using electromagnetic waves. It’s a direct shot. The secret is in the gold. We put a thin layer of gold on the quartz tube to change how the heat moves. Standard tubes let a lot of energy leak out, which usually just warms up the oven walls (which helps nobody). The gold acts like a mirror, bouncing that heat right back toward your food. The result? Your oven hits temperature faster, and you aren’t pulling nearly as much power from the grid per batch. Actually going green When people talk about a “green kitchen,” they usually mean fancy labels. For us, it’s about energy density. If we can concentrate the heat and slash the bake time, we lower the carbon footprint. Period. We’ve tuned these heaters to hit the exact wavelengths that organic food absorbs best. It’s just more efficient. The “catch” (and how to handle it) Now, you can’t just toss these into any old oven and call it a day. Because the heat is so intense, it can chew through cheap plastic parts or melt low-grade gaskets. You have to be smart about your insulation. And then there’s the controls. IR reacts fast. Really fast. If your controllers aren’t tuned for that speed, you’ll blow right past your target temperature and end up with a tray of charcoal. But once you’ve got the wiring and the settings dialed in? You’ve cut out all that wasted air. It’s just a leaner, smarter way to bake.
